The Caponera cheese company was founded in the 1970s in Colfiorito, on the plateau between the Umbria and Marche regions, and was given a new company structure in the ‘90s when Adriano Caponera became its sole director. Thanks to the entrepreneurial spirit with which Adriano Caponera continues to lead it, together with the contributions of his daughters, Ilaria and Beatrice, and a staff highly skilled in the cheese-making industry, the Company has succeeded in making a name for itself in the dairy and cheese production sector. In 40 years of operation, much has changed, particularly in the last decade; indeed, thanks to rapid industrial development, the production facility has undergone considerable expansion, adopting the latest technologies including newly-built machinery and production plants.
